Keto Meatloaf – Stuffed w/ Goat Cheese & Spinach


I win the meatloaf contest. Keto Meatloaf – Stuffed w/ Goat Cheese & Spinach

Servings: 6

Prep Time: 15 minutes | Cook Time: 50-60 minutes | Total Time: 1 hour 15 minutes

Nutritional Facts: 5g Net Carbs| 382 Calories | 26g Fat | 6g Carbs | 35g Protein | 1g Fiber

Ingredients:

  • 2 lbs fatty floor beef – ideally grass fed
  • 2 eggs
  • three scallions (chopped)
  • 1 giant yellow onion (chopped)
  • three garlic cloves, minced
  • a handful of uncooked spinach
  • three-four ouncesof chevre goat cheese (get the lengthy roll and you need to be good!)
  • 2 tbsp tomato paste
  • four shakes of cayenne pepper
  • a pinch of oregano
  • 2 pinches of salt
  • 1 sprig of rosemary
